Kitchen cookware has enjoyed many transitions over the centuries thanks to new materials becoming affordable and more mainstream. Rachael Ray Cookware Products - Cooking Tips and Techniques

Spanish Style Pot Roast Ingredients:

4-pound chuck roast 1.8-kilo gram

2 teaspoon salt 10ml
One-fourth pepper 1ml
2 cups dry red wine 500ml
1 tablespoon cornstarch 15ml
One-fourth cold water 60ml

Procedure:

At first, you need to cut the green pepper into strips, discarding the stem, the seeds, and the membrane. Next, you peel and quarter the onion. Then chop the pepper and the onion finely in a food processor or food chopper. Be careful not to puree it. Following that, you add the garlic, the bay leaf, the marjoram, the one-half teaspoon (2ml) salt and the 2 tablespoon (30ml) olive oil. Blend the aforesaid ingredients well. Rub this mixture into both sides of the roast and let it stand for an hour.

Next, you scrape any of the green pepper mixture that is loose off the roast and save it. Then, you heat the 2 tablespoon (30ml) olive oil in a large heavy Rachael Ray saucepan or Dutch oven. Cook the meat well until it becomes browns on all sides. Then, you add the tomatoes, the green pepper mixture, the cinnamon, the cloves, the 2 teaspoon (10ml) salt, the pepper and the wine. Bring it to a boil, and then turn down the heat. Cover and simmer it 3 to 4 hours or until the meat becomes very tender, then turning the roast occasionally.

Afterward, you lift out the meat and place it onto a hot platter. Then, you add the cornstarch with cold water and stir it until it becomes smooth and blended. Next to that, you bring the liquid in the Rachael Ray pan to a boil and stir it in the cornstarch mixture gradually. Then, cook it until it is boiling and slightly thickened. Then, you taste it and add some salt and pepper if necessary. Serve it as gravy with sliced meat.

Get the Most Out of Your Cast Iron Cookware With the Proper Seasoning Techniques

Cast iron cookware is an old fashioned form of cookware that still has a place in today's world of modern cooking. You will find all types of cast iron pots, pans, skillets, tea kettles, and even large dutch ovens. Those who routinely use cast iron swear by it's versatility and durability. I personally think that a good set of cast iron cookware is hard to beat.

There are a few conditions that you do have to meet when using cast iron. One of these is seasoning the new cast iron items that you buy or maintaining the seasoning of the ones you already own. Seasoning of cast iron is required to promote a non-stick surface on the cookware and make it easier to clean. Another consideration when dealing with cast iron cookware is maintaining the items in an environment where they will not begin to rust. Rust is one of the true enemies of the otherwise durable product. If these two conditions are met, then the cast iron cookware that you buy today, could still be in everyday service a hundred years from now.

Cookware Sets

The first aspect of seasoning cast iron is to start with a clean pan. Take the newly purchased item and remove any adhesive from stickers, and any other foreign material that does not belong. Washing the pan with warm soapy water and then drying it completely is normally sufficient. Next, pre-heat your oven to about 250 to 300 degrees Fahrenheit. The next step is to use lard or some other animal fat like bacon grease to start the seasoning process. Avoid vegetable oils as they tend to get very sticky and can ruin a brand new pan. Coat the inside of the pan with the lard and place it into the pre-heated oven for about 20 to 30 minutes. You will want to keep an eye on it to make sure the grease doesn't get too hot and start to smoke during this process. Once time has passed remove the pan and get rid of the excess grease inside the cast iron pan. Then, put the pan back in the oven for another 20 minutes or so to finish the seasoning process. A new cast iron pan may require several treatments like this to establish a good "layer" of seasoning. What I mean is that you may have to do this a couple of times before the pan starts to become really non-stick and easy to use for everyday cooking jobs. Afterwards, you can use the cast iron to cook and it wouldn't hurt to use it to fry bacon or something fatty every once in a while to help maintain good seasoning on the pan.

As mentioned before, rust is one of cast iron's true weak points. Rust can quickly turn a beautiful, well seasoned pan into a useless eyesore that you aren't quite sure what to do with. Preventing cast iron from rusting is simple if you remember a few guidelines. Always store your cast iron in a dry place. Do not keep it under the kitchen sink or hanging above your stove where it will be exposed to a steady supply of steam. Never put your cast iron away without thoroughly drying it. An easy way to dry cast iron is to place it in a hot oven for about five minutes or put it on a stove burner on high for a minute or so. This will burn off any excess water left over from when you washed it and will almost guarantee the avoidance of rust. If you do discover that your cast iron treasures have become rusted over time, there are steps to reclaim them. You may even come across a beautiful historic piece of cast iron at a yard sale or flea market and decide to revive it. Chinese Cooking Utensils

There are quite a few traditional utensils that have been used in cooking for thousands of years in China. Some of them are still seen in most of families, some can only be seen in rural areas, or may be disappearing in the modern world. But to cook authentic Chinese food that always tastes like grandma's, some of the utensils simply cannot be replaced by what you see in American stores.

Chinese Wok

Cookware Sets

Deep pan with round bottom used in several ways. Comes in iron, stainless and stainless with layer of copper on the bottom. Iron heats most evenly, but should be seasoned before using or food will stick.

To season: Fill pan with water. Add soap and soda and bring to boil. Pour off water, wipe dry. Place pan over strong heat. Add oil and rotate till pan is coated. Pour off excess oil. Place pan over weak fire and wipe with dry cloth.

To clean: After using pan, wash while still hot. Wipe and place over heat to dry completely.

Knife

Heavy and wide. All purpose - for paring, cutting, slicing, chopping and carving.

Iron Palette

Comes in square or round front. Rounded ones are easier to use with Chinese wok. Use for frying, sautéing and basting.

Iron Spoon

Use back side for mixing food with minimum breakage.

Steamer

Used for steaming buns, chicken, meat, fish. Place over Chinese wok filled with boiling water. Buy one size smaller than wok. There are new styles of steamers on the market made of different materials. But Chinese believe that the traditional steamer works the best.

Slotted Spoon

Used for deep frying and boiling to get rid of excess oil or water.

Wire Sieve

With handle. Used for boiling noodles, dumplings, etc.

Steamers for Pastries

Small in size - about 15cm (6") in diameter. Used in same method as large steamer. Serve hot pastries in steamers. Typical foods served are small meat buns (small steamer meat buns, or Xiao Long Bao Zi), steamed meat dumplings (Shao Mai), etc.

Moulds for cookies

Made from wood with various carved designs. No longer popular in the modern society since people tend to buy cookies off the shelf. Some may still use the moulds for major holidays, or just Chinese New Year.

Bamboo Brush

Used for washing hot wok. Guess only people in some rural areas still use this type of brush. More people use regular washing cloth found on market.

Rolling Pin

Once seasoned, whether by the manufacturer or by you, your Dutch Oven may never need to be seasoned again.

Dutch ovens are intended for long, slow cooking--in fact, it's the original slow cooker. A Dutch oven will give a temperature of approximately 300 degrees, with the heat even distributed throughout its interior. You can cook many familiar home-style recipes in this utensil, and it is particularly suited to stews, roasts, soups and other one-pot meals. One of the things that makes it great for camping is that you can start a meal cooking and then go about enjoying the rest of the camping experience without having to constantly peek at how the food is coming. Just give it time.

Aluminum Cookware - Is It Really Dangerous?

Should the debate surrounding the association between aluminum and Alzheimer's disease be concern when considering the use of aluminum cookware in your kitchen?

Reports from both the EPA and Health Canada indicate that there has been no identifiable link between Alzheimer's disease, or other neurological diseases, and the ingestion of aluminum. However, it has been suggested that aluminum may have an affect on those who already have the disease.

Maxam Cookware

The old adage "experience is the best teacher" is probably as true for cooking as for anything. We are Mennonite folk who have been cooking for over 50 years. My mother was a wonderful cook. I treasure the memory of growing up and coming home to the most wonderful aroma of bread baking.

I remember one time when I was so sick in bed that I refused to eat anything. Then my mother baked some "fresh out of the oven" yeast raised dinner rolls and brought me one to eat. Would you believe me if I told you that I didn't stop with one? I can't remember how many I ate, but I think my mother thought I was going to have an additional illness from eating so many rolls.

My husband's mother was not as fortunate as mine, her mother died when she was seven years old. She died from the flu in 1918, which, by the way, was brought to the US by the soldiers coming home from World War 1. My mother-in-law told me one day, "How would you do this? I need to learn from you because I never had a mother to teach me."

Our Mennonite and Amish heritage has taught us to cook from scratch, without all the preservatives in our food. We call it plain cooking, but it is really very tasty and very healthy, especially when much of it comes from our own gardens. Our parents were farmers and raised most of what we ate. But even back then in the 1940s and early 1950s our parents saw the value of cooking with stainless steel cookware. My mother had a set of lifetime stainless steel cookware.

Today we have graduated to Maxam lifetime, waterless stainless steel cookware. We love cooking with it immensely. There are no metals that will contaminate your food. Nor will there be any food chemicals to discolor your cookware, because stainless steel is not affected by any food chemicals.

I have been cooking for a family here in SC, where we live, for about 24 years. One day the Mister said to me, "You know, you are a much better cook than you were when you first came." I answered him, "I know. Cooking is an art. All your life you keep learning new techniques and new ways of doing things, and you keep collecting new recipes.
