How to Cook Tri Tip in Your Oven Like an Expert

If you've got any of my other cooking articles here, you know I'm somewhat of a tri tip expert. I love it. Normally, I do mine on the grill, but there are times (especially when I'm busy) where I'll cook it in the oven. And you know what? It still tastes great. Here's how I do it.

First of all, you need to rub / marinade your meat however you like it. There's no perfect way. I've done tri tips all kinds of ways-it's the cut of meat I use when I experiment. However, you're going to want some wet works for the cooking. This could be a mixture of olive oil and other ingredients or your preferred marinade.

Cookware Sets

If your meat is in the refrigerator, take it out for about 5-10 minutes before cooking.

Heat up your oven to about 425 degrees F. Make note that cooking times and temperatures can vary from oven to oven.

Next, place your tri tip on a baking pan fat side down. Drench a little of your preferred wet works over it and slide it in the middle of your oven. Set your timer for about 45 minutes. Your cooking time might be about 1 hour, but from about the 45 minute mark, you want to pay real close attention to the meat.

Here's the key. Every 8-10 minutes, add some more marinade over the top of your tri tip. You may end up doing this 6-7 times depending on final cooking time. Remember to take it out before it's actually done, because it will continue to cook for up to 10 minutes afterward. And I like to wrap mine in foil for 5 minutes before cutting it.

Lastly, if your cut of meat has a fair amount of fat on the fat side, start it in the oven with that side up for about 8 minutes and then flip it for the rest of the duration. If you've done everything right, your tri tip from your oven will be very tasty.

Another factor into how well your food is cooked is your cookware. If it's not that great, you'll get sub-par results. Personally, I think hard anodized cookware is the top of the line. What Is Tri Ply Cookware?

Tri Ply displays one of the worlds most popular and functional cookware concepts. Tri Ply is basically two or three different metals that are laminated or bonded together to obtain the advantages of the two metals in one piece of cookware.

The metals most often used to create this high quality cookware are stainless steel, aluminum and copper. This type of cookware is often more expensive but is very durable and conducts heat faster and more evenly. The two main types are with just a base or disc inserted in the bottom and on your top quality cookware the inside layer goes up the side as well as at the base.

Cookware Sets

The most popular type of tri ply is stainless steel with aluminum. This type has an aluminum core sandwiched between two layers of stainless steel. The construction of this type of cookware starts in the raw material stage, with sheets and blanks. The aluminum is laminated between two sheets of stainless steel and then molded into the desired shape.The highest quality of this type is when 18/10 stainless steel is used to cover the aluminum core with 18/8 and 18/0 being of slightly lesser quality due to the different amount of nickel and chromium used to make the stainless steel. This type of cookware, because of how it is constructed is expensive but worth the money since it lasts so long. It is great for all types of cooking and most brands can go from the stove top to the oven.

One thing to keep in mind when buying this type of cookware is that you can get the same high quality product without having to spend your life savings. There are quality cookware companies out there that can give you the same great product, made with the same materials as the top brands. Just be sure that you read up on the materials used and how it is made. The big companies know they are popular and will charge you more for their name so be careful.

Another type of tri ply cookware is made with copper, aluminum and stainless steel. It starts the same way as the stainless steel/aluminum kind but has copper laminated on the outside instead of stainless steel. It has three layers with copper on the outside, aluminum in the middle and a stainless steel interior. Copper is used for it's conductivity as well as the aluminum since stainless steel alone is not a good conductor of heat. The process of making this type of cookware is also expensive, a little more so than the stainless steel and aluminum type. It is better for the stove top because of the insulation properties of the copper. Copper does react with food and will discolor it and can even be toxic with some foods which is why most copper cookware is lined with tin, nickel or stainless steel. Despite this fact it is still a top quality product. Having copper cookware will also make a statement in your kitchen with it's classy look and mirrored finish.

As with all cookware products, as stated earlier, you want to do a little homework. Sometimes the big name brands are not the best buy for the money. You can look at what they offer for the price and compare. With a little knowledge you will most likely find a quality cookware set for about 30 to 50 percent cheaper than the big guys without compromising on quality.

Pork Roast - How to Cook it Moist and Tender

Would you like to cook a pork roast that will make your mother-in-law turn green with envy? Follow these guidelines and you can put dried out and tasteless pork roast behind you forever!

Cooking pork roast is not rocket science. All it takes is heat and time and you'll wind up with cooked pork. However if you want to cook a pork roast that is moist, tender and delicious there are some guidelines to follow.

Cookware Sets

The first step in the perfect pork roast formula is selecting the type of roast. Next on the agenda is determining the best cooking method for the roast you've selected.

This decision making process also works in reverse. If you know the cooking method you want to use you then decide on the cut of pork.

Probably the most important step in cooking today's pork is brining! This takes a little time planning to allow the roast to absorb the brine but it is well worth the effort.

Selecting the Roast

I'll have to admit that if I'm just hungry for pork roast my decision for the type of roast is whatever is on sale. Then I'll decide how to cook it based on what is best for that type.

If you don't want to use the "whatever is on sale method" then a little knowledge of pork roast is in order.

Most all pork roasts come from the shoulder and loin wholesale cuts. There are fresh ham roasts (the hind leg) but you will rarely see them in groceries. Also pork sirloin roasts are from the hind part of the loin and they fit the shoulder roast category.

Shoulder Pork Roasts

Roasts from the shoulder contain several different muscles along with connective tissue and a good amount of fat.

These roasts benefit from long slow roasting times that allow the connective tissue to break down. They are extremely flavorful due to the amount of fat.

Shoulder roast cuts include the whole shoulder, which is good for a crowd, Boston butt, the top of the shoulder and Picnic roasts from the bottom.

These roasts all might have different names in your grocery according to the cut.

Roasts from the shoulder are the cut of choice for recipes such as pulled pork.

Pork Loin Roasts

Roasts from the pork loin are the best roasts from the pig. They are single muscle roasts without much fat. These muscles are from the center of the back of the pig and get very little usage, which makes them tender.

Basically there are two main roasts from the loin. By far the most tender is the pork tenderloin. The mild pork flavor of the tenderloin lends itself to marinades to impart flavoring.

The pork loin roast has a slightly stronger pork flavor than the tenderloin and is extremely lean. It compares in leanness to chicken breast.

Brining Pork Roasts

Most all meat products will benefit from brining.

Brine is simply a solution of non-iodized salt and water. The meat has a less concentration of salt and water than the solution so Mother Nature takes over to equalize the two.

Basic brine is 1 cup of non-iodized salt to one gallon of water. But it doesn't stop there. All sorts of flavorings can be added to the brine and will be imparted to the roast.

A brined pork roast increases in weight because of the brining. The weight is all water. As the roast is cooked most of the water is cooked out but some remains resulting in a moist and tender roast.

The shoulder and sirloin roast will benefit from brining but they are just fine without it due to the fat content. For a pork loin roast, however, I consider brining essential because of its low fat content.

Cooking Pork Roast

Pork roasts are a little more forgiving when selecting a cooking method than their beef equivalent.

There are two basic methods for cooking meats. These two are the "moist heat" method and the "dry heat" method.

Moist heat simply means that there is a liquid included along with the roast in the cooking vessel.

The moist heat method is for cuts that are from the less tender sections of the animal. The moist heat assists in breaking down the fibers and tissue of the meat to yield a tenderer product.

Roasting in the oven, the crock-pot or even an electric skillet are ideal methods of applying heat to the roast during moist heat cooking. Either method should include a tight fitting heavy lid.

Pot roasts and braised roasts are examples of the moist heat cooking method.

The dry heat cooking method is the opposite of the moist heat method. No liquid is introduced during the cooking process.

Dry heat cooking should include a searing of some type for a crispy and flavorful exterior. You can sear the roast in a skillet or in an extremely hot oven for a short period of time.

Dry heat can be applied in the oven, on the grill or my favorite the smoker.

Pork Roast Cooking Times

Cooking time is critical for a moist and tender pork roast.

There are many variables to pork roast cooking times. Some of those variables include the type of roast, the size and thickness of the roast and the cooking temperature.

There are some rules of thumb for cooking time for the different roasts but at best they are only a guess.

A two to five pound pork loin roast cooked at 350 degrees f. will require roughly 20 to 30 minutes per pound.

Pork tenderloin in the one to two pound category will require the same 20 to 30 minutes per pound but at 425 degrees F. instead of 350 degrees.

A two to five pound Boston butt roast will require approximately 45 minutes per pound at 350 degrees F. The extra time is to allow the connective tissue to break down and the fat to melt and mingle with the roast.

The only sure way to know when your roast is done is to use a meat thermometer.

If you are roasting in the oven an oven thermometer is also recommended. Oven thermostats are notoriously inaccurate.

Like I said cooking pork roast is not rocket science. Following these guidelines, however, will yield a pork roast so moist and tender it will surely impress your guests and will definitely make your mother-in-law turn green with envy.

Affordable Halloween Recipes - Scary Food Ideas Using Tuna

Creepy food is always part of a Halloween feast and no matter how simple they come, they add color to the occasion. You may be preparing for a Halloween festivity or a simple get-together fun; a little creativity can turn even your most standard meals into creepy Halloween treats. Here are some ways to transform something ordinary to something extraordinary, using tuna.

Tuna Brain Salad

Make two cups of tuna and mayo mixture the way you usually do it, but add more mayo or cream to make it appear creamy. Set aside. Prepare a cup of "clear or colorless" gelatin according to the package instructions then stir the cooked gelatin on the tuna and mayo mixture. Pour mixture into a brain mold. You can buy one at bakery items or seasonal stores. Chill for 1 hour.

Unmold by turning the mold upside down then gently pop out the brain onto a platter with a bed of lettuce. You can use your hidden sculpting skills to make the tuna even look like a brain.

Tuna Witch Fingers

Slice tuna fillets to form finger-shaped pieces. Fry on your usual way. Paint the pointed end or "nail portion" by using some red food coloring and brush on with a small kitchen brush. If you have a red decorator gel, squeeze gel onto the tip of the tuna slices to form nails.

Halloween Tuna Eyeballs

Combine ground tuna, flour, cheese, some butter, pepper and salt. When the tuna mixture is enough to hold together, shape into eyeball-sized balls. Flatten each ball just a little and press pimiento-stuffed green olive in the center. Arrange in a way the "eye" (pimento) is facing outward. Mold tuna meat around the olive, and bake for 10 minutes.

Tuna Monstrous Sandwiches

In this recipe, use white tuna fish that is packed in water. Cut tuna into small pieces then mix with celery, mayonnaise, lemon juice and seasonings. Cut the bread slices in the shape of ghosts. Spread tuna mixture onto the bread to form sandwiches. Use raisins to make the eyes and mouth.

Celebrating Halloween doesn't really need to be expensive. Creepy, maybe, but these Halloween recipes are only designed to put smiles and fun around. I hope the Halloween tuna ideas will help to get you started in creating memorable Halloween traditions. Halloween Food Ideas - Scary Chocolate Fun Bites for Kids

You wanted something unique and scary Halloween surprises for your kids but you don't have time to make those treats, so even a little bit over the top would do. Why not break out into the simplest chocolate bites with the unusual food colors to infuse a Halloween feel into your treats? Little ones love chocolate and making something tasty that ties in with Halloween is sure enough to get your celebration unique. Try these simple chocolate bites.

Wormy Chocolate Cupcakes

Cookware Sets

You'll need:

  • ½ cup of water
  • 1 cup granola oil
  • 4 eggs
  • 1 box ( 18 oz.) cake mix with pudding
  • 1 cup of ready to spread chocolate frosting
  • 24 gummy worms

What to Do:

Set the oven 350 degrees and preheat. Prepare muffin pan by placing paper cupcake liners into the muffin cups. Spray with a non-stick cooking spray evenly. In a mixing bowl, whisk together water and oil then add the eggs and continue whisking until blended. Gradually add the cake mix powder and stir to combine well. Fill the paper lines 2/3 full of the batter and bake for 20 minutes, or until a toothpick inserted in the cupcake comes out clean.

When done, take out cupcakes from muffin pan and transfer to a wire rack until slightly cool. Make a coin-size hole in the center of each cupcake. Place your prepared frosting inside a parchment paper or a baggie and squeeze into the cupcake holes. Press a gummy worm into the frosting of each cupcake.

Creepy Chocolate Ice-Cream Cups

You'll need:

  • 10 graham cracker tart shells
  • 10 scoops of vanilla ice cream
  • 20 chocolate cream filled cookies, crumbled
  • 20 red M&M candy pieces
  • 20 pieces of black shoestring licorice, cut into fourths

How to Make It:

Arrange graham cracker shells on a baking pan. Fill each shell with 1 scoop of ice cream then top with the crumbled cookies coating heavily. Freeze for 30 minutes to one hour, or until the ice cream has hardened. Press 2 M&M's into the front to look like red eyes, and press 8 strips of licorice into each ice cream scoop to form the spider's legs. Return to the freezer until serving time.

Chocolate Ghost Bites

You'll need:

  • 2 pkg. (12 squares) white Chocolate
  • 1/4 cup whipping cream
  • 1 tablespoon of butter, softened
  • Decorating gel

How to Make It:

Melt the chocolate squares, cream and butter in the microwave for 2 minutes, stirring after 1 minute. When the chocolate is completely melted, cover. Freeze until firm, about 1 hour or more. When chocolate is cool enough to handle, scoop with a spoon and roll chocolate mixture into bite-size spooky balls. Place the balls into a waxed paper and freeze for 20 minutes. Use a decorating gel to draw eyes on the frozen spooky balls to resemble ghosts. Refrigerate for 30 minutes to 1 hour. This will make your chocolate spookies firm upon serving.

You will be amused how kids will respond to the ideas. They will be thrilled at first to touch the scary chocolate bites yet at the end they will eat them all. You may wrap the squirmy chocolate cupcakes in decorative plastic wrap to give as giveaway. These ideas also go for adults!

Quality Stainless Steel Cookware is a Real Pleasure to Use and Clean

Some people are afraid to use stainless steel cookware, afraid that the lack of Teflon coating will make food cooked in them stick. I bought my first stainless steel pan set from HSN shopping network, and decided to try them out for myself. These pans are a dream, and clean up beautifully. My experience with these beautiful pans has been nothing but positive, and I've put them through their paces. The 20-piece aluminum pan set I bought is by Wolfgang Puck, a well-known chef, who definitely knows good pans when he sees them. Here are some of the highlights of this lovely set.

My set included a 1-quart saucepan, a 2-quart saucepan, an omelet pan, an 8-quart stock pot, a sautepan, and a large wok. All are heavy, and very well-constructed. Also included were glass lids for all pots and pans, as well as some lovely stainless cooking utensils such as spoons, turners, a fork, tongs, a skimmer and even an adjustable measuring spoon. The elegant mirror finish on all pieces makes all of them worth displaying. My kitchen looks much classier with these pans in use.

Cookware Sets

Most importantly, these pans cook evenly and quickly. I have gas burners, and use the pans on medium heat for best results. I followed the included instructions, which tell the user to first preheat the pan, then add the oil or butter to the hot pan. Then, add whatever you are cooking. It worked like a charm, and nothing has stuck. To clean the pans, while they are still hot, I pour water in them and then take a cloth, to wipe out any leftover mess, or run the hot pan under the faucet, to remove the food. It works wonderfully, and quickly.

Before buying this set, I was a slave to the cheap Teflon-coated pans. But, the coating didn't cook as evenly as I'd liked, and scratched. Plus, there are studies out nowadays about these kinds of coated pans allegedly being bad for health due to chemicals given off while cooking. I have one iron pan that is nice but a whole set of them is way too expensive for my middle-class budget. This set of cookware was reasonably priced and, watching them being used on HSN, I could tell that they were of high quality. In person, they are even more impressive, along with the cooking utensils, which are also heavy and well-made. I'm giving away my cheap, plastic spatulas, spoons and fork to someone else now that this set happily meets all my cooking needs. They show no wear at all with multiple uses, and the food cooked in them didn't burn or singe at all. I couldn't say that with the old coated pans.

If you want a quality set of cookware, Wolfgang Puck's line of stainless steel pots, pans and utensils won't steer you wrong. They are worth every penny paid, and more. A professional cook wouldn't put his name and reputation at stake by endorsing lousy pans. Try them and see how easy they are to use and clean. You won't be disappointed.

There are so many different types of cookware on the market today, it can be hard to decide which to type to buy. When I decided to replace my worn out pots and pans, I decided to do a little research before making a purchase. I was amazed at the differences in types of cookware. I found that some types of cookware are more healthier cooking choices than others. Here is a list of each type of cookware's pros and cons. This should help you make up your mind when it comes time for you to update your own cookware.

Stainless Steel- Stainless steel is one of the best choices for cookware, as long as it is properly cared for. Stainless steel is nearly non-stick and heats evenly, especially if it has an aluminum clad bottom. Never use scouring pads or metal utensils with stainless steel. Scratching the inside of the cookware can allow small amounts of chromium and nickle to leach into your food. Be sure to follow cleaning instructions from the manufacturer when caring for stainless steel cookware.

Copper Clad Exterior with Stainless Steel Lining- To retain the shining copper exterior on copper clad requires more care than just stainless steel. It has also been suggested that aluminum cookware can be linked to Alzheimer's disease, but this has not been proven.

Anodized Aluminum- Anodized aluminum is safer to use than regular aluminum cookware. It has been treated in a special process to prevent any leaching of metals into your food. It is also lightweight and heats evenly and quickly. It does not react when cooking acidic foods either.

Copper Cookware- Copper cookware is very pretty, but if not cared for properly it can also leach into your food. It is usually coated with a protective layer to prevent this from happening. I would avoid using this type of cookware if it is uncoated or the coating is scratched or dissolved. For best results, follow the instructions given by the manufacturer.

SilverStone and Teflon- SilverStone and Teflon are both non-stick cookware finishes. They make cooking and cleanup a breeze, but they can also emit harmful fumes when used over high heat. When scratched, small amount of the coating can also get into your food. Don't use Teflon if you have a pet bird. The fumes from cooking with Teflon is hazardous to birds.

Cast Iron Cookware- Cast iron cookware is one of the best choices for cooking. It conducts heat evenly and has no hot spots. When properly cared for, it is a nearly non-stick cookware. Since we need iron in our diets, the small amount of iron that leaches into food is actually a benefit. Cast iron must be seasoned to keep it from rusting. Follow the instructions that come with your cookware to ensure a properly seasoned finish. Due to the thickness, it heats up more slowly than other types of cookware. It is also extremely heavy, which can be a draw back for people with hand or wrist problems.

After much debate, I finally decided to buy a quality set of stainless steel cookware. I'm caring for the finish as recommended, and I'm making sure to only use wood or plastic utensils when cooking. This set of cookware should last for many years to come.

I already have a 13" cast iron skillet and absolutely love it. The only reason I chose stainless steel over cast iron was because it's hard to find cast iron saucepans in the most common sizes. I may yet add a smaller size cast iron skillet or griddle to my cookware collection before I'm completely satisfied.

Because of the misconception that Teflon (a registered trademark of DuPont) is synonymous with "PFOA," a term you've come to hear about in recent years.

Here, we will explain the difference, try to set the record straight. And tell you how to safely enjoy your no stick cookware.

First, what is PFOA? Also known as "C-8," perfluoro-octanoic acid is a surfactant, a critical aid in the polymerization of aqueous-based fluoropolymers. It is also used in the manufacture of many consumer products today.

Is PFOA dangerous? Well, in 2005, under a risk-assessment study by DuPont and Environ International, it was determined that PFOA traces are in the blood of most everyone on the planet. No illness has ever been associated with this compound, including workers in chemical plants exposed to much higher levels.

PFOA is not Teflon, the brand we come to identify as a generic name for DuPont PTFE (polytetrafluoroethylene). Nor is PFOA fluoropolymer. Nor is PFOA a PTFE dispersion.

And PFOA is not in your no stick cookwares. Why?

Because PFOA is released in the manufacture of the no stick coating cookware. Measurement for PFOA, even at the parts per billion level, are undetectable.

Does this make no stick coatings for cookware safe?

Yes, though you should avoid overheating your cookware. While Teflon has remarkable heat stability, prolonged exposure to cooking temperatures above 500 degrees Fahrenheit is not recommended. Not only does it reduce cookware life, over heating can lead to emitting fumes unsuitable for inhaling. Will they harm you? Worst case - and you would have to breathe enough of them - would be temporary flu-like conditions, such as chills, fever or headache. In my many years working with these products, independently, I have never experienced these symptoms referred to as 'polymer-fume fever'.

What temperatures can your no stick cookware reach? Consider these 'safe' examples. Scrambled eggs cooked on medium for a few minutes can produce surface temperatures just over 200 degrees Fahrenheit. For chicken stir fry, cooked on high for over five minutes, temperatures around 300 degrees Fahrenheit.

Bacon, cooked for about five minutes on high, about 450 degrees Fahrenheit.

So, what is 'risky cooking'? Consider empty pans pre-heated, with or without oil, which will exceed 500 degrees Fahrenheit, in just a couple of minutes. Foods like hamburgers, especially steak, risk even higher temperatures.

Follow these precautions and cook safely: Avoid metal spatulas. Wood or plastic cooking utensils are ideal. When storing your cookwares, prevent scratching by separating cooking surfaces with cloth or paper towel. Do not heat your cookware empty. Never use high heat. Be sure your kitchen area is well ventilated. Choose heavier-duty cookware for more heat absorption. And do replace your cookware the first sign of flaking or peeling.

Difference Between T304 and T316 Waterless Stainless Steel Cookware

When shopping for waterless cookware, it is important to determine your priorities. What cookware pieces are you most likely to use? What type of steam control mechanism would you like-steam valve or thermo control knob? To be classified as waterless cookware, the cookware must be at least 5 ply (layers), have some type of steam-control valve and have a flat, encapsulated bottom that contains the metal layers enclosed in stainless steel. Waterless cookware is typically sold on the Internet, home parties, or state and county fairs. The cookware sold in department store environments is generally 3-ply. Waterless cookware because of its composition and construction is more expensive than conventional cookware. However, even within the waterless cookware market, there is quite a price range between competitors. Most waterless cookware is T304 surgical stainless steel. T304 cookware has the following advantages including corrosion resistance, temperature resistance, flavor protection, and ease in cleaning. With proper care and maintenance, this cookware will keep its shine and beauty for a lifetime. Recently, a few companies have started to use T316 in their cookware. While there are some distinct differences between the two, the visible eye cannot detect any difference between the two. Further, there is not a distinguishable difference in taste either. What then is the actual difference between the two grades of stainless steel?

Type 304 contains 20% chromium or more and 10% nickel, comed with 0.08% carbon. It is used for chemical processing equipment, for food, dairy and beverage industries, for heat exchangers, and for milder chemicals. In the cookware industry, the 304 steel is most often used in the manufacturing process. T304 has the ability to withstand the corrosive action of various acids found in fruits, meats, milk, and vegetables. Therefore, it is often used for sinks, tabletops, coffee urns, stoves, refrigerators, milk and cream dispensers and steam tables.

Type 316 contains 16% to 18% chromium and 11% to 14% nickel. Type 316 also contains 2% molybdenum. The molybdenum is added to help resist corrosion to chlorides (like sea water and de-icing salts.) Type 316 is the main stainless steel used in the marine environment, with the exception of screws, bolts, nuts, and other fasteners where strength and wear resistance are necessary. Then Type 304 is typically used.

Do the differences specified above justify spending over 00 for Saladmaster that now uses 316 stainless steel? Saladmaster offers a great product but many people simply cannot afford such an investment in cookware. When comparing the two grades, the differences are negligible. When exposed to harsh sea salt conditions 24 hours a day for 7 days a week, T316 would last longer under those conditions. If exposed to high concentrations of sodium chloride, T316 is definitely preferable. Therefore, if you are were to put one cup of sodium chloride (table salt) into 4 ounces of water on a daily basis, you would benefit from using the 316 stainless steel over the 304.

If you are considering the purchase of this cookware, two of your primary questions should be: (1) Which cookware set offers the pieces that I would most likely use? (2) What type of steam control valve would I prefer-the steam-control value that has an open/shut lever or the Thermo-control value that has a color-coded dial that visibly shows the cooking temperature.

Waterless cookware is a lifetime investment. While T316 cookware might be the best option for marine use, the majority of cooks can feel comfortable using T304 surgical stainless steel. You need cookware that allows heat to be distributed evenly. You are probably very familiar with pans that have hot spots. Stainless steel is in the middle price range and heat conductivity. It is durable and cleans easily and will not react with any type of food you cook. Another good choice is stainless steel with an aluminum insert that goes all the way up the sides of the pan.

The conclusion would seem to be that in order to get a good set of cookware, you will have to spend some money, but it is not necessary to get the most expensive type.
